🥛 400 ml skimmed milk – the lighter base, keeps the panna cotta smooth but not heavy.

🍶 200 ml light cream (15% fat) – gives just enough richness without making it too caloric.

🍯 2 tbsp agave syrup (or mild honey) – a natural sweetener that blends perfectly with milk and cream.

🌿 1 tsp vanilla extract – for that classic Italian aroma.

🍃 2 gelatin sheets (or 1 tsp agar-agar) – what makes the panna cotta hold its silky texture.

🍓 200 g red berries (strawberries, raspberries, blueberries, or a mix – fresh or frozen).

🍯 1 tbsp agave syrup – to sweeten the coulis.

👩‍🍳 Step-by-Step Cooking Journey
1. 💧 Soften the gelatin

Put the gelatin sheets in cold water for 5 minutes. They will become soft and flexible.
👉 If you use agar-agar, skip this and add it later directly to the hot milk.

2. 🥛 Heat the base

In a saucepan, gently warm the milk and light cream with vanilla.
Add the agave syrup and stir.
⚠️ Important: Do not let it boil — you only need gentle heat.

3. ✨ Add the magic thickener

With gelatin: squeeze out the water, stir into the hot milk until fully dissolved.

With agar-agar: whisk in the powder and let it simmer for 1–2 minutes while stirring.

4. 🍮 Pour into molds

Carefully divide the mixture into ramekins or transparent glasses.
Let it cool a little at room temperature, then refrigerate for at least 3 hours until firm.

5. 🍓 Prepare the berry coulis

Blend the red berries with 1 tbsp agave syrup until smooth.
If you prefer a silky coulis, strain it to remove the seeds.

6. 🌿 Serve with style
